A rare wine: The winegrowers have imposed themselves very strict rules for production in the purest tradition of the great Bordeaux wines: low yield, vinification in small volumes, long maturation and systematic bottling at the castle. The Cadillac Côtes de Bordeaux is indeed one of the few Bordeaux appellations that is required to be bottled at the castle, and thus offers the greatest guarantees of quality and authenticity. Cadillac Côtes de Bordeaux wines (Premières Côtes de Bordeaux) are blended wines made from 4 grape varieties that make and have made the great wines of Bordeaux 1er-Côtes-de-Bordeaux. The AOC Premieres-Côtes-de-Bordeaux became Côtes-de-Bordeaux for sweet white wines and Cadillac-Côtes-de-Bordeaux for red wines on October 31, 2009. The appellation covers the slopes of the right bank of the Garonne on a very narrow strip of 60 km long and 5 km wide. There are about twenty different soils, from clay and limestone to gravel, including gravelly clay to clay. The Premiers-Côtes-de-Bordeaux AOC belongs to the Entre-deux-Mers region and produces sweet white wines south of the AOC, and red wines from the rest of the vineyard. The grape variety consists of the 3 main red grape varieties of Bordeaux (merlot, cabernet franc, cabernet-sauvignon), as well as the 3 white grape varieties typical of Bordeaux (sauvignon, sémillon, muscadelle). Young, the red wines, Cadillac-Côtes-de-Bordeaux, are tannic but they round quickly to improve with age.
