The Distillery: Bimber Distillery (London)

Founded in 2016 by Dariusz Plazewski, the London-based urban distillery Bimber (a term meaning "moonshine" in Polish) quickly rose to the top of the most sought-after English spirit producers in the world.

The craft requirement: Bimber controls every step of the process. The barley comes from a single partner farm (Single Farm Barley) and is traditionally floor-malted. The exceptionally long fermentation (7 days) takes place in American oak washbacks crafted on-site by their own coopers, giving the distillate a light and fruity character even before cask filling

The Whisky: Selfridges Exclusive Edition (June 2020)

This bottling seals Bimber's very first retail partnership, teaming up with one of London's most iconic department stores: Selfridges.

Royal Double Maturation: The distillate first aged in four first-fill American oak ex-bourbon casks. These casks were then married together to undergo a premium finish in a single 2010 vintage Oloroso Sherry Butt, sourced directly from the prestigious Spanish bodega González Byass.

Ultra-Limited Edition: Bottled in June 2020 from cask lot no. 544-7/67, this release yielded only 936 individually numbered bottles. True to the brand's philosophy, this whisky is bottled at a powerful 51.5% ABV, without chill-filtration or added coloring.

The contribution of ex-bourbon maturation combined with the richness of the González Byass Oloroso Sherry offers an absolutely indulgent profile.

Nose: Very vibrant and jammy. Intense notes of small red berries mingle with aromas of gingerbread, fruitcake, poached apples, and pear juice, all lifted by hints of cinnamon and nutmeg

.Palate: Velvety and thick texture. A fruit explosion blending diced pineapple, sliced bananas, juicy raisins, and dried figs. The vanilla cream is energized by a peppery touch and candied ginger.

Finish: Long, opulent, and warm, marked by the richness of candied fruits balanced by the oak wood spices.
