Japanese Kitchen Knife

Japanese kitchen knives are characterized by their razor-sharp cutting edge and durability, made possible by techniques inherited from Japanese sword-making. Their quality is highly regarded throughout the world.

日本の台所包丁は、日本刀の技法を受け継いだ切れ味と耐久性で知られています。その品質は世界中で高く評価されています。

The oldest surviving Japanese kitchen knife dates from the Nara period and is preserved at the Shōsōin in Nara. Because knives were consumable tools that were used and sharpened down over time, very few old examples survive; however, it is believed that they existed even before the Nara period. These ancient knives resembled Japanese swords in shape and were characterized by their exceptionally long handles.

現存する日本の台所包丁の最古例は奈良時代にさかのぼり、奈良の正倉院に保存されています。包丁は使って研ぎ直して消耗する道具だったため、古い実例はごくわずかしか残っていませんが、奈良時代以前にも存在したと考えられています。これらの古代の包丁は形状が日本刀に似ており、柄が非常に長いのが特徴でした。

It is said that knives closely resembling the modern deba, yanagiba, and nakiri styles were perfected during the mid-to-late Edo period.

現代の出刃包丁、柳刃、菜切りに近い包丁は、江戸中期から後期にかけて完成したと言われています。

The Edo period was an era of social stability during which Japanese culture flourished greatly. Alongside this, a rich variety of food cultures blossomed, and the tools suited to each style of cuisine developed accordingly.
