Grapes: Cabernet Sauvignon 90% - Petit Verdot 10% Notes: Powerful and rich nose, with an important aroma of wild fruit and spices. Notes of tobacco and dark chocolate. The taste is fresh and savory, the tannins are present and balanced. Great structure and full of energy. Vinification & Aging: After manual selection on the sorting table, the grapes are delicately destemmed and pressed, taking care not to break the skin of the grapes. The meticulous alcoholic fermentation takes place in our open-top stainless steel winemakers at a controlled temperature with maceration of the grapes for approximately 20 days. Daily délestages allowed the perfect extraction of the aromatic bouquet and the right tannic balance, with an important structure that will allow for long aging. The refinement takes place in first and second passage French oak tonneaux for a period of approximately 22 months and is subsequently assembled and bottled. Pairings: excellent to accompany traditional Maremma dishes, such as meat stews, first courses based on game ragù and mature cheeses.
