Vinification takes place for the first few days in steel at a controlled temperature, then fermentation continues in oak vats.
After the alcoholic fermentation, it carries out the malolactic one in new oak barrels, keeping the lots separate for the first 12 months of maturation, then assemble them and proceed with the aging for another year.
After bottling, the 'Masseto' rests for another 12 months in the bottle, before going out on the market.
