Michel Couvreur - Clearach 2018-2021 Edition - 700ml

The Michel Couvreur company is based in Bouze-Lès-Beaune, France, and was created by the eponymous Burgundy wine shop of Belgian origin. Michel Couvreur, who fell in love with the world of whiskey in the 1970s, decided to create his own company to refine and bottle whiskeys of the highest Scottish tradition. Today the company is managed by his son-in-law Cyril Deschamps and his wife Alexandra, daughter of Michel Couvreur, assisted by the cellar master Jean-Arnaud Frantzen. Michel Couvreur continues to purchase whiskeys from small Scottish artisanal distilleries and then refine them in barrels that have previously aged Sherry, as per Scottish tradition, and Port. The refinement process takes place in the cellars owned by Michel Couvreur, which extend over 150 metres, located in Bouze-lès Beaune, in Burgundy, halfway between Andalusia (where Sherry is produced) and Scotland (where whiskey is made). The selection of barrels is fundamental for Michel Couvreur: so much so that today, in addition to the barrels that have aged Sherry and Port, those that have contained Jura Vin Jaune have also been added. This decision allows us to offer an exceptional diversity of Whiskeys capable of maintaining the aromatic peculiarities that identify them and make them unique, always according to Michel Couvreur's motto: Virtute et Opera. Variety Clearach is a single malt whisky, therefore obtained from malted barley. Production: Distillation using a still takes place in a single distillery located in Scotland. The refinement lasts for at least three years in 500 liter and 250 liter oak barrels which previously contained Sherry. Distilled at 65% vol., Clearach whiskey loses a lot of alcohol concentration during aging and, after the addition of water from Scotland, the alcohol content reaches 43% vol. Characteristics: With an amber colour, very pale, almost golden, the nose combines hints of frangipane and almond, typical of very young single malts, with a good herbaceous freshness and slightly honeyed notes. Lively on the palate, despite its young age, it reveals a good structure and a silky consistency. Not peated. Boxed, 700 ml.
