Hand-harvesting of the grapes. Maceration on the skins for approximately 20 days, with fermentation taking place in stainless steel tanks at a temperature of around 26°C. Malolactic fermentation is completed before winter. In the spring, the wine is transferred to large 50-hectolitre oak barrels to age for at least 30 months, followed by a period of at least 12 months in stainless steel tanks prior to bottling. It offers an intense bouquet of red fruit preserves and wild berries, along with floral notes of dried rose and violet, followed by more complex nuances of spice, liquorice, leather, and forest floor.
