With this Comte Lafond Sancerre the wine dream of Comte Lafond, ancestor of Baron Patrick de Ladoucette, began. The vineyards are located on southern steep slopes around the famous villages of Sancerre: Bué, Chadoux, Chavignol and Verdigny. The vines are 25 to 35 years old and the soil consists of clay, limestone and silica. No machines or pumps are used during harvesting and vinification. The domain is completely designed for gravity. Fermentation takes place very slowly in stainless steel tanks for 6 to 8 weeks under controlled temperatures to preserve the freshness and aromas characteristic of the variety. It is then aged on its lees for 3 to 6 months, depending on the vintage, and is stored in tanks with a glazed tile coating where it is refined before being released to the market, a process that can take two years.
The Sancerre Comte Lafond is sparkling pale yellow with green highlights. The well-balanced aromas of white flowers mingle with the notes of wild mint and dill. A small touch of exotic fruit mixed with citrus underlines the mineral notes of flint. The taste is elegant and lively with a long aftertaste of ripe lime and pebbles.

Today the winery in the hands of Comte Lafond’s descendent Baron Patrick de Ladoucette. The Sauvignon Blanc grapes are whole-cluster pressed, then fermented at cool temperature in stainless steel tanks for six to eight weeks, with an additional three to six weeks on the lees. This careful handling results in an elegant wine with focused, fresh, citrus fruit flavors and flinty notes. The time on lees, the expired yeast cells, ensures that the citrus fruit has a smooth, silky texture.
