- Wine / Winery History: The legend of Dom Pérignon dates back to the Benedictine Abbey of Hautvillers, where in the 17th century, the monk Dom Pierre Pérignon revolutionized viticulture in Champagne and laid the foundations for the traditional method. The Rosé version, historically introduced with the rare 1959 vintage, represents the Maison's most daring and complex expression. The 2009 vintage was characterized by a warm, sunny summer that allowed an extraordinary phenolic ripening of the grapes. This vintage is a masterclass blend of Pinot Noir (with roughly 15% vinified as still red wine from the historic villages of Aÿ, Bouzy, and Hautvillers) and Chardonnay. It underwent nearly 12 years of aging on the lees in the historic cellars before disgorgement, developing a warm, deep bouquet dominated by red fruits (raspberry, cherry), figs, saffron notes, and gingerbread.
