Vintage Japanese Deba & Yanagiba Knife Set – “Minamoto Kikusui (源菊水)” & “Yoshisada (善定)” – Traditional Japanese Fish Knives
An attractive pair of vintage Japanese kitchen knives, combining two of the most characteristic traditional Japanese fish-knife forms: a substantial Deba and a long, slender Yanagiba.
The Deba is traditionally associated with breaking down and filleting whole fish, while the Yanagiba is designed for long, smooth slicing cuts when preparing sashimi and sushi. Together, they represent two complementary stages of traditional Japanese fish preparation. MADE in JAPAN.JP
Both knives retain Japanese blade inscriptions and traditional wooden Wa handles. The Deba is particularly interesting because it preserves multiple original markings and vintage labels, including the “源菊水” blade inscription, two surviving labels and a branded mark on the reverse side of the handle.
