Offered here is a compelling set of three vintage traditional Japanese Deba knives (出刃包丁), each bearing engraved signatures. These thick, single-bevel blades are purpose-built for fish butchery, filleting, and precision breakdown work—an essential form in professional Japanese kitchens.

The substantial blade geometry, classic wa-handles, and visible age give this set strong collector presence as well as restoration potential.

The handle bears a label reading “Honsuigyū” (本水牛) indicating a genuine water buffalo horn ferrule.
