This cuvée is part of the exclusive “Lou Pepe” range, distinguished from the classic Gueuze by its use of only carefully selected 2-year-old lambics, typically drawn from exceptional barrels of a single vintage. The result is a Gueuze that is often described as more intense, structured, and complex, with a deeper expression of mature lambic character.
The blend undergoes secondary fermentation in bottle, creating natural carbonation and a fine, champagne-like effervescence. As with all Cantillon beers, fermentation is entirely spontaneous, relying on wild yeasts and ambient microflora from the brewery environment.
