Japanese kitchen knives are distinguished by their razor-sharp cutting ability and durability, achieved through techniques derived from Japanese sword-making. Their quality is highly regarded throughout the world.
The oldest surviving Japanese kitchen knife dates from the Nara period and is preserved at the Shōsōin repository in Nara. Because knives were consumable items that were used and sharpened over time, very few old examples survive; however, it is believed that they existed even before the Nara period. These ancient knives resembled Japanese swords in shape and were characterized by their exceptionally long handles.
It is said that knives closely resembling the modern Deba, Yanagiba, and Nakiri styles were perfected during the mid-to-late Edo period.
The Edo period was an era of social stability and great flourishing of Japanese culture. Alongside this development, a rich variety of food cultures blossomed, and the tools best suited to each style of cuisine evolved accordingly.
