“Tiré Liège" (ageing under cork during the second fermentation) is a process that allows more exposure to oxygen during élèvage in the aim of createting deeper, more complex and finely textured Champagnes. While barrel ageing is relatively common in Champagne, tirer à liege is less so… and it’s not for the faint hearted, considered a risky business tackled by only the most skilled vignerons.
Frederic Savart started his experimentation with this technique in 2011, sealing a limited number of magnums under cork for their second fermentation. Over the next 10 years, at every tasting of these experimental bottling, Frederic became more and more convinced on the exceptional complexity brought by the method, and started to implement it in other cuvees, making it a trademark of his unique style.
This year, Frederic has decided to disgorge and release the remaining magnums to market as he deems them to be now in their prime. As only 850 were produced back in 2011, this is one of the rarest cuvees released by Frederic to date. Thanks to 12 years of ageing on the lees, under premium cork, Le Pinot Noir is one of a kind - An utterly complex Champagne bearing the signature of one of the greatest growers of the current generation.
