Dominio Do Bibei is a red wine made from the Brancellao and Mouratón grape varieties, produced in the Ribeira Sacra D.O. by the Dominio Do Bibei winery. The brainchild of a young team of winemakers, Dominio Do Bibei is a winery that integrates seamlessly into the rugged landscape of the Ribeira Sacra, both in form and substance. This project, which includes figures such as Sara Pérez (Mas Martinet) and René Barbier (Clos Mogador), aims to capture the essence of the terroir in the bottle in the most natural and environmentally friendly way possible. To achieve this, they have constructed a building that blends into the landscape, using a terraced design that allows for gravity-flow winemaking. The grapes for Dominio Do Bibei come from 23 hectares of their own vineyards, planted at an altitude of between 250 and 350 meters above sea level. An exceptional terroir of schist and granite soil and a climate of Atlantic contrasts results in a wide variety of nuances in the grapes. The harvest is done by hand in 10-kilo crates. In the winery, the bunches are hand-selected and destemmed. They undergo a three-day pre-fermentation maceration, followed by alcoholic fermentation of Dominio Do Bibei in open French oak barrels. Finally, the wine ages in used French oak barrels for 19 months. Dominio Do Bibei is a highly expressive red wine that embodies the finesse and elegance of the unmistakable Atlantic wines of the Ribeira Sacra.
