Paul Henri Thillardon crafts Beaujolais wines of exceptional quality. Although he belongs to the younger generation of winemakers in the region, he is already regarded as one of its leading figures. His estate is based in Chénas, alongside an additional parcel in neighboring Moulin-à-Vent. Domaine Thillardon follows biodynamic principles, working in harmony with nature. The only addition is a minimal amount of sulfur dioxide during and after fermentation. The Gamay grapes for this Chénas “Chassignol” 2018 from Domaine Thillardon come from a vineyard directly adjacent to the winery, situated on a steep hillside where mechanization is impossible, requiring work to be carried out by horse. This exceptionally elegant Chénas is made from old, organically farmed Gamay vines rooted in granite soils strewn with quartz. The bouquet reveals refined aromas of red berries, candied orange peel, rose petals, and spices. On the palate, the wine is medium to full-bodied, with a layered core, subtle concentration, soft tannins, and a long, impressive finish, delicate yet powerful. Jasper Morris: "The holding covers 6ha in total, though not all is in this cuvee which is from 90 plus year old vines. Fair depth of colour, a lively purple. Extraordinarily perfumed nose, a soapy edge in its youth but delivering a wealth of rich peony notes. The wine has an incredible succulence stretching out across the palate. Note too the amazing texture with fine grained tannins permeating the succulent fruit. Very long fine finish. And very clean. Tasted May 2019."
