The Deba is a heavy, thick-spined traditional knife designed for filleting fish and cutting meat. This set includes three different sizes, making it an incredibly versatile and practical collection for professional chefs, home cooks, or knife enthusiasts. 【Craftsmanship & Maker's Marks / 職人技と銘】 Two of the knives feature prestigious Sakai maker's marks, proving their authentic Japanese heritage: Large Knife: Engraved with "堺白鶴作" (Sakai Hakutsuru Saku). "Hakutsuru" means "White Crane," a traditional Japanese symbol of longevity and elegance. Medium Knife: Registered and engraved with "登録 堺匠作" (Sakai Takumi Saku). It still retains the original golden sticker from Sakai (堺), which guarantees its traditional handcrafted quality. Small Knife: A classic, unregistered vintage companion knife, perfect for smaller fish and detail work. 【Condition / 状態】 These are vintage, pre-owned items. As seen in the photos, they show signs of age and use, including scratches, stains, and some rust patina, which is characteristic of traditional high-carbon steel. However, the blades are structurally solid, the handles are tight, and the single-bevel geometry (including the traditional Urasuki hollow-ground back) is well-preserved.
