Item Description Japanese Kitchen Knife Maker: 祐豊 Suketoyo, 忠房 Tadafusa Type: 柳刃 Yanagiba Size (longest part): 35 × 3 cm Blade length: 20.5 cm Weight: 330 g Japanese kitchen knives are characterized by their razor-sharp cutting edge and durability, achieved through the application of Japanese sword-making techniques. Their quality is highly regarded throughout the world. The oldest surviving Japanese kitchen knife dates from the Nara period and is preserved at the Shōsōin in Nara. As kitchen knives were consumable items that were regularly sharpened down with use, very few old examples survive; however, it is believed that they existed even before the Nara period. These ancient knives share a similar shape to Japanese swords and are characterized by their exceptionally long handles. It is said that knives closely resembling the modern deba bōchō, yanagiba bōchō, and nakiri bōchō were completed between the mid and late Edo period. The Edo period was an era of social stability during which Japanese culture flourished greatly. Along with this, a rich variety of food cultures blossomed, and the tools suited to each style of cuisine developed accordingly.
