The Domaine Gérard Doreau is located in the village of Monthélie in the Côte-des-Beaune in Burgundy. Monthélie is located between Meursault, Auxey-Duresses and Volnay. Doreau makes Monthélie, of course, but also Meursault, among others. Domaine Doreau is small, inconspicuous and still truly authentic. Doreau's style is wonderfully traditional and classic. Only old wood is used. Vineyard Originating from the vineyards 'Le Près de Manche' and 'En Garguillot'. The soils contain limestone and a lot of clay. The vines are on average 40 years old. Grapes are picked and selected by hand. Vinification The grapes are pressed as soon as they arrive in the wine cellar. The juice is fermented in wooden barrels where the yeast cells are regularly stirred into the wine ('batonnage') for extra complexity and creaminess. The wine is then aged for 12-15 months in French oak barrels, 10% of which are new. The wine matures on its own yeast cells, to add extra creaminess and complexity to the wine.
