1 bottle Kilchoman Pedro Ximénez Sherry Cask Matured Limited Edition 700ml, 50% vol. Founded in 2005, Kilchoman is the first distillery to be built on the island of Islay in over a century. Cradled by the sea spray of Machir Bay beach, the first single malt was born in September 2009. Built on the model of a 19th century "farmhouse distillery", Kilchoman makes a point of handcrafting a peated malt with fine saline accents. The PX Sherry Cask Matured 2023 Edition was matured for a minimum of five years in Pedro Ximénez sherry casks previously used by Bodega José y Miguel Martin, Jerez, Spain. The time spent maturing in Pedro Ximénez casks, has given the whisky layers of rich, sweet PX influence which balance beautifully with the citrus sweetness and peat smoke of the Kilchoman spirit.
