Created at the end of the 19th century by two brothers, Joseph and Victor Clarac
Gentian is an aperitif liqueur traditionally made from fresh gentian roots macerated in a hydro-alcoholic mixture.
Gentiane de Cette, on the other hand, is a highly complex wine-based drink, made by macerating dried gentian roots and other aromatics in a white wine specially selected for its organoleptic qualities and high alcohol content. This specific recipe gives it a subtle and unique taste as well as a lower alcohol content compared to other gentian liqueurs.
Enjoyed on its own as a light aperitif, in a longer drink, or as a mixology ingredient, Gentiane de Cette is the quintessential aperitif of the highlands: straightforward, mineral, and memorable.
Tasting Notes
Appearance: Deep reddish-brown.
Nose: Gentian roots and citrus zest in the background.
Palate:
Soft attack, unfolding of a dry and persistent bitterness characteristic of gentian, notes of citrus peel. Long, slightly earthy finish.
Serving Suggestions :
Serve chilled: 8-12°C but without ice.
Food and Wine Pairings:
As an aperitif on its own or in a cocktail like Spritz :
A revisited bitter liqueur with crème de cassis, violet syrup, or orange juice;
An alternative Spritz: 1 part Gentiane de Cette to 2 parts dry sparkling wine, a splash of soda water, and a citrus zest;
With tonic water, soda water, and a slice of citrus for a longer aperitif.
Gentiane de Cette also pairs well with aged cheeses, rustic charcuterie, or even with dark chocolate desserts to complement its bitterness.
