The Alphonse Mellot estate cultivates its vines in accordance with organic and biodynamic principles. Thus, the harvest is manual and the grapes are carefully sorted several times. A cold maceration takes place for about ten days to retain only the tannins and the most delicate aromas of Pinot Noir.
