Elena Walch's Pinot Noir Riserva "Aton" vineyards grow on soils predominantly composed of clay and limestone, with marlstone and dolomitic rock, resulting in a final product with an unmistakable character. Winters are harsh and snowy, with sudden frosts often just before spring; summers are hot, sunny, and characterized by significant temperature variations between day and night, ideal for the grapes. The altitude is approximately 400 meters above sea level and the southern exposure provides constant sunlight and warmth. The grapes are harvested by hand between the end of August and the first ten days of September. In the cellar, the wine undergoes cold maceration for five days and ferments in stainless steel for 15 days. It then ages in barrique for 12 months and rests in stainless steel for a year.
