The "Il Greppo" Riserva is produced entirely from Sangiovese Grosso vines over 25 years old, and only in exceptional vintages. After careful selection of the bunches, the grapes are brought to the cellar where fermentation begins, taking place in large, temperature-controlled Slavonian oak barrels. Aging follows traditional practices and lasts approximately 36 months, also in medium-large oak barrels. After a further aging period of several months in bottle, the wine is ready for release. Only 10,000 bottles of this Riserva are produced, and, a testament to its longevity, some have been opened as long as fifty years after the harvest, proving perfectly intact.
