Poja Allegrini is made from Corvina grapes, harvested by hand towards the end of October when slightly overripe. The grapes are then crushed and destemmed, then fermented for approximately 20 days in stainless steel. After the vinification process, the wine ages in new Allier barriques for 20 months, followed by another 10 months in bottle.
