Deba knives are specialized Japanese kitchen knives designed primarily for fish preparation, including filleting, head work, and precise butchering tasks. Their thick spine and weight-forward balance make them one of the most respected traditional knife forms in Japanese cuisine.

This set includes two signed vintage examples with distinct personalities and excellent presence.

1. “関孫六 金寿 (Sekimagoroku Kinjyu)” Deba Knife

The larger knife bears the inscription:
“関孫六 金寿”
(“Sekimagoroku Kinjyu”)

This knife has a classic wide-bodied Deba profile with substantial weight and traditional proportions. The aged wooden handle and visible forged texture on the blade surface give it the atmosphere of an authentic working Japanese kitchen knife from the Showa era.
