With the "king of wines," there are no compromises; long aging, first in wood and then in bottle, is the path to excellence: the development of those refined and pungent tertiary aromas that characterize the maturity of Barolo.
The maximum permitted yield is 80 quintals of grapes per hectare. Furthermore, rigorous pruning and bunch thinning during the summer ensure a very limited fruit production. The grapes are harvested in mid-October, followed by slow fermentation and a long maceration period, which enriches the wine with all the natural elements present in the skins. After racking, the wine is racked into wooden barrels to complete malolactic fermentation, where it ages for at least 18 months.
