The CC - 2021 Release is the fifth expression in the distillery's limited annual series. Following the structural shift introduced in 2020, this edition continues to move away from traditional pure-sherry maturation. It specifically isolates and highlights the flavor impact of American white oak. For this vintage, the Macallan Whisky Mastery Team chose a distinct combination of ex-bourbon casks and American oak ex-sherry casks. This specific pairing was engineered to blend the light, bright sweetness of bourbon-aged wood with the signature, deep spiced-citrus complexity of Macallan's sherry heritage.
Maturation: A blend of ex-bourbon American oak and sherry-seasoned American oak casks.
Color: Golden barley or natural golden oak (100% natural color).
Tasting Notes: The 2021 expression is noticeably lighter, crispier, and more dessert-forward than earlier entries in the series. It trades the deep, heavy, dark-raisin traits for lighter pastry-shop aromas.
Nose: Opens with distinct orange zest and citrus oils, fresh vanilla pod, and ginger, followed by fruit jellies and sweet marzipan.
Palate: Soft, fresh oak notes nicely layered with warmed gingerbread, vanilla custard, pastry notes, and soft cinnamon spice.Finish: Medium-sweet and lingering, with a gentle heat from spiced fruits and toasted oak.
