Barón de Chirel is a red wine from the Rioja D.O. produced by Marqués de Riscal, one of the region's classic wineries. This wine is a blend of Tempranillo (80%) and other varieties (20%). The grapes come from a selection of very old vines, between 80 and 110 years old, with very low yields but exceptional quality. Barón de Chirel is only produced in exceptional vintages and in very limited quantities. As for its production, after hand-harvesting and sorting, fermentation takes place at a controlled temperature of 26ºC with maceration lasting no more than 12 days. Malolactic fermentation occurs in wooden vats, followed by 20 months of aging in French oak barrels. It then undergoes at least a year of bottle aging before release.
