Before the grapes were blended with the lambic, they underwent a skin maceration of 3 months in chestnut barrels. Kriek Cantillon 100% Lambic Kriek Cantillon 100% Lambic is a Belgian spontaneously fermented beer. The beer is brewed at the Cantillon Brewery in Anderlecht. It is a ruby-red fruit beer based on lambic with an alcohol percentage of 5.5%. Since 1999, Cantillon lambic has been brewed exclusively with organically grown ingredients, and since 2003, the lambic has carried the organic label. However, the wait for the fruit beers was slightly longer because there was initially insufficient organically grown fruit available. Since 2009, however, a Kriek bearing the organic label has also been launched on the market. Kriek is a guaranteed traditional specialty recognized and protected by Europe. Previously, it had already been recognized as a regional product by the Flemish Centre for Agricultural and Fisheries Marketing (VLAM).
