Japanese Kitchen Knife
Maker: 関孫六 Seki Magoroku , 藤五郎 Tōgorō
Type: 柳刃 Yanagiba
Size (longest part): 34.5 × 3 cm
Blade length: 20.5 cm
Weight: 337 g
Japanese kitchen knives are characterized by their razor-sharp cutting edge and durability, made possible by the same craftsmanship used in the production of Japanese swords. Their quality is highly regarded worldwide.
The oldest surviving Japanese kitchen knife dates from the Nara period and is preserved in the Shōsōin repository in Nara. As kitchen knives were consumable items used and sharpened over time, very few old examples survive; however, it is believed that they existed even before the Nara period. These ancient knives are characterized by their resemblance to Japanese swords and their exceptionally long handles.
It is said that kitchen knives closely resembling the modern deba, yanagiba, and nakiri styles were perfected during the mid to late Edo period.
The Edo period was an era of social stability during which Japanese culture flourished greatly. Alongside this, a rich variety of food cultures blossomed, and the tools suited to each style of cuisine developed accordingly.
