It represents harmony between the fruit from two great estates—Mas Alsera in Torroja and Sant Martí in Bellmunt—forging a link between the rugged center and the warm south of the region. This is Rocafosca: our flagship wine and the benchmark for understanding the personality of Costers del Priorat. A welcoming, honest introduction. Winemaking Hand-selection, berry by berry. Indigenous vineyard yeasts. Vinification takes place in stainless steel tanks and concrete vats, using a mix of destemmed grapes and a small proportion of whole clusters (with stems). Each variety is vinified separately to capture the full expressive potential of the grapes. Aging lasts for one year in 3,000-liter Slavonian (Croatian) oak foudres and in amphorae. Tasting Note The world of colors and aromatic sensations found while walking any trail in Priorat is concentrated in this wine, which mirrors our region. Dark red in color, it offers depth, energy, and the wisdom of the selected hillside vineyards. On the palate, it is complex, combining ripe fruit and hints of Mediterranean scrubland with a distinctive, sharp, cool note—the hallmark of the extreme minerality found in the slate soils. Food Pairing Grilled meats—lamb, Ibérico pork, ox, and veal—create the ideal harmony for this wine. However, there are other, less obvious options. For instance, it pairs beautifully with creamy, rich dishes—ranging from mushroom cannelloni to a tuna stew or a classic risotto. ELABORACIÓN Selección manual, grano a grano. Levaduras indígenas del viñedo. La vinificación se lleva a cabo en depósitos de acero inoxidable y tinas de cemento con una parte de la uva despalillado y una pequeña parte con su raspón. Cada variedad se vinifica por separado para obtener el máximo potencial expresivo de cada uva. La crianza se realiza durante un año en fudres de roble de Eslavonia (Croacia) de 3.000 litros, y en ánforas. NOTA DE CATA El mundo de colores y sensaciones aromáticas que encontramos caminando por cualquier sendero del Priorat se encuentra concentrado en este vino que es el espejo de nuestra comarca. Rojo oscuro, profundidad, energía y la sabiduría de las laderas seleccionadas. En boca es complejo, une frutas maduras, recuerdos del matorral mediterráneo y también una característica nota aguda y fría, marca de la mineralidad extrema de los suelos de pizarra. GASTRONOMÍA Las carnes hechas a la brasa –de cordero, de cerdo ibérico, de buey y ternera– representan la armonía ideal de este vino. Pero existen otras opciones menos evidentes. Por ejemplo, va muy bien con platos cremosos y con cierto aporte de grasa. Desde de unos canelones de setas hasta un estofado a base de atún o un risotto clásico.
