Vinification and Aging For the first time in this 2019 vintage, the vinification process involved manual sorting and destemming of the harvest without the use of machinery. The vats were filled with whole grapes and lightly punched down the cap. Aging was carried out using 50% new barrels, 35% dolia barrels (custom-made concrete made with elements from the Pontet-Canet terroir), and 15% previously-owned barrels. Blend Cabernet Sauvignon (65%), Merlot (30%), Cabernet Franc (3%), Petit Verdot (2%).
