The Réserve Perpetuelle Non Dosé comes from the Grand Cru and Premier Cru vineyards of Ay and Mareuil-sur-Ay. The assembly requires the use of approximately 20-30% of the wine stored in the wood using the seasoned sole. Maturation for three years on the yeasts before disgorgement. No dosage. The most authentically expressed from the territory and style of Philipponnat. Bright golden yellow colour, persistent perlage. On the nose it opens up on floral hints of hawthorn, with a strong hint of citrus fruits, exotic fruits and lime. In the mouth, it opens with great freshness and minerality. Long, persistent finish with notes of green apple and brioche. Great elegance.
