Tornatore's Etna Rosso wine is a blend of two quintessential native grape varieties from the Etna area: Nerello Cappuccio and Nerello Mascalese. The grapes come entirely from the northern slopes of the municipality of Castiglione di Sicilia, and after being hand-harvested, they undergo careful selection. After destemming and light pressing, maceration takes place in concrete tanks for approximately 10-12 days. After fermentation, the grapes macerate for a few more days, and after being drawn off, they age for a year in large wooden barrels and three months in the bottle.
