HERMITAGE YANN CHAVE 2020 THE VINTAGE The Hermitage represents only 1.2 ha of the property. These 25-year-old vineyards are located in Beaume and Péléat, on a southwest-facing loess floor. Vinification is distinguished from crozes-hermitage by a longer fermentation (3 to 4 weeks). It is carried out in the most gentle way possible, with temperatures not exceeding 28°C. After decuvage, the wines are sunted into new half-muids and a wine, where they will carry out their malolactic fermentation. Aging in these containers will last a year, which is well suited to the syrah since the wine is not excessively woody. After this aging phase, the wines remain in the tank for another six months in order to decant them naturally before bottling. THE YANN CHAVE DOMAIN The Domaine Yann Chave is located in the municipality of Mercurol and s?' Extends over 18 hectares within the Crozes-Hermitage and Hermitage appellations.
