The cuvée les Mémoires has been produced since the 2012 vintage, from vines more than a hundred years old and asserts itself as a superb saumur-champigny, racy and complex. Indeed, this closed of 80 ares on the hillside of Dampierre is composed of flint scree and limestone. The tillage is complex in order to preserve the old vines and maintain a great floral diversity. The grapes are picked up by hand before being transported to the sorting table. The fermentation takes place in an open concrete tank of 45 hectoliters at a controlled temperature to extract the maximum aromas and fats. In the glass, the dress is an intense ruby red, of a very high density. Its nose exudes aromas of violet, red and black fruits, as well as notes of cocoa and licorice. The mouth brings freshness and acidity in a beautiful balance, fine tannins and a nice length. This cuvée with immense potential will benefit from aging a few years in the cellar.
