Aging The grapes are mainly harvested in the morning, then sorted and destemmed. Direct pressing is used for the Cinsault, Grenache, and Rolle. The Syrah is vinified by bleeding. Vinification is carried out in temperature-controlled stainless steel vats (95%) and in barrels (5%) with stirring.
