Today, it is one of the world's last traditional distilleries, with little presence on European markets. Beenleigh produces its rums from molasses and local water. It is a ‘Single Blended Rum’, produced using an original technique that is ‘reversed’: distillation takes place first in a column, then in a pot still. The pot still is called ‘The Old Copper’, and is similar to those used by Demerara. The rums are then aged in large wooden vats and old bourbon casks. Alongside its official bottlings, Beenleigh has begun a collaboration with La Maison & Velier, with two releases in 2021. This new reference is completely unique in the Australian rum landscape.
