The forefather of anise-flavored liqueurs, it was created in 1805 by Henri-Louis Pernod.
The drink is the legacy of Pernod 45, first marketed in 1938, coinciding with the passage of French legislation re-permitting the sale of 45-proof liqueurs and alcoholic beverages.
From 1951 to 1954, Pernod marketed a liqueur labeled Pernod 51, a reference to its year of creation (alcohol- and anise-based aperitifs were prohibited on the French market and were reauthorized in 1951). In 1954, Pernod 51 was renamed Pastis 51, then simply 51.
Since 2005, Pernod has been marketing Pernod with Roman wormwood extracts, an "alcoholic anise" inspired by a recipe that brought Pernod success in the late 19th century, taking advantage of the lifting of the ban on the sale of absinthe in France. This sugar-free drink, 68% ABV, contains less than 10 mg/L of thujone (a ketone and a terpene), present in Roman wormwood, which complies with current French legislative requirements.
The batch consists of two 1-liter bottles and two 75-cl bottles.
