Harvest takes place at night to take advantage of the low temperatures and thus preserve the quality of the grapes. Under the press, only the first must is selected, with only the head of the cuvée remaining. Fermentation takes place for three weeks at a controlled temperature. Oenologists and cellar masters then work together to create the blend of this cuvée, adhering to the strictest requirements for color and organoleptic characteristics.
