Following a rigorous selection of the grape clusters, a portion of the Pinot Noir remains in contact with its skins for a few days to extract color; the blend of Chardonnay and Pinot Noir both vinified in steel tanks is created shortly before bottling. After bottling in the spring, the wine ages on the lees for over 24 months and, following disgorgement, rests for at least another six months before release.
