Winemaking in open spout. Fermented entirely in stainless steel tanks with temperature control and pumping over times. Interruption of fermentation by adding 96% wine alcohol. Addition of wine alcohol after 8 - 10 days of fermentation in order to maintain the desired amount of sugars. Winemaking carried out according to traditional methods. Aged using the traditional Canteiro system, in French and American oak barrels of different capacities. TASTING NOTES Wine with an attractive and bright golden color with evolving tones. Delicate and complex aroma with notes of dried fruit. Dry, vibrant finish with notes of nuts and persistent fruit. SERVING It goes well with olives, toasted almonds, smoked salmon canapés, sushi, caviar, tuna, light soups, salads, ham, dried fruits such as almonds and walnuts. Excellent as an aperitif. Store upright, in a cool, dry place, away from light and temperature fluctuations. Serve at a temperature between 9ºC and 11ºC. Consume in moderation. HISTORY "Justino’s Madeira Wines, S.A." was formed as a limited company in 1953, although it had been in existence since 1870 in Madeira as a private family company, when it was known as "Justino Henriques". This makes it one of the oldest producers and exporters of Madeira Wine, internationally known for the quality of its wines. In 1993, it became internationalized, making an association with one of the larger French groups of wine and spirit distribution – C.O.F.E.E.P also knows as La Martiniquaise - building a new winery with the intention of improving the conditions in which its wines are made, in particular the process of vinification, production and aging. This large, modern and functional winery has been equipped so as to combine traditional methods with the most advanced technology available. Today, Justino’s Madeira holds one of the largest stocks of Madeira wine on the island, including high quality wines aged in oak casks, which enables the company to meet the requirement of the most demanding and selective consumers. Over the years, Justino’s Madeira Wines, S.A. has become one of the leading producers and exporters of Madeira Wine thanks to the acknowledged quality of its wines and the substantial increase in its production capacity.
