Exclusive use of the cuvée. Fermentation carried out entirely in barrels. Only the very high quality harvests are vintage at Bollinger: In 2007, the harvest dates were among the earliest in more than a century.
The plots of Vieilles Vignes Françaises were harvested on August 31st and reveal a magnificent Pinot Noir. Maturation: a maturation time in the cellar more than 2 times longer than the rules of the Appellation.
Maturation takes place under a cork. Dosage: moderate, 8 grams per litre.
Pinot Noir from two unique plots located near the Maison in Aÿ, vines grown in the old-fashioned way in crowds, and worked entirely by hand.
SENSATIONS To the eye: a deep gold colour. On the nose: a beautiful aromatic complexity. From the first floral notes of lime blossom and chamomile, evolving into notes of truffle and acacia honey.
On the palate: the palate impresses with its intensity, opulence and balance.
Aromas of candied lemon, tarte tatin and gingerbread. An exceptional length, with a finish on sweet spices reminiscent of cinnamon. FOOD PAIRING: White caviar; the Alba truffle.
