Founded in the 19th century, the H. Pommier workshop is celebrated among culinary collectors for producing copper cookware of a quality that rivals the finest historic French houses like Mauviel and Dehillerin.
This specific piece features a beautiful, clean solid copper interior, making it highly prized by pastry chefs for whipping egg whites or boiling sugar syrups/caramels. To use it for everyday acidic cooking, it can easily be professionally re-tinned.
