FRANCK BALTHAZAR - CUVEE CHAILLOT - BIO 2017 Today, Franck Balthazar's Cornas are organic and in the cellar, the vinification tends towards "nature": whole harvest and indigenous yeasts, long and gentle maceration over a period of 13 to 14 days. Aging, in order to reflect the terroir and the vintage, is carried out in 600-liter barrels which are at least 5 years old so as not to overflow the wine. The bets are without filtration, without sticking with a minimum of sulphites for stabilization. Beautiful dark red color that sets you the tone. On the nose, an expressive, very floral wine with a spicy touch (minerality). The palate is dense without excess with young but fine tannins. We find this side of macerated black fruits, new leather, peony. The finish is clean, structured with a nice freshness that accompanies the tannins for a few seconds.
