In the glass, "Les Couarres" displays a bright straw yellow color and a fine, persistent perlage. On the nose, it offers a complex bouquet with notes of white and yellow fruit, nuances of pastry, and a subtle minerality. On the palate, it is elegant and structured, with a pleasant savory finish and remarkable persistence, characteristics that reflect the vineyard's clayey soil.

Chartogne-Taillet's Extra Brut Champagne "Les Couarres" is a refined expression of the Merfy terroir, located in the Montagne de Reims. This Champagne is made from a blend of 60% Pinot Noir and 40% Chardonnay, sourced from the "Les Couarres" parcel, characterized by tuff and clay soils that give the wine remarkable depth and structure. Vinification takes place with indigenous yeasts and natural malolactic fermentation in French oak barrels aged between 3 and 7 years, followed by aging on the lees for approximately 36 months in bottle, without filtration or fining. The dosage is 1.25 g/L, resulting in an Extra Brut that purely expresses the characteristics of the vineyard.

The bouquet is an explosion of sweet and refined aromas, with notes of ripe apple, bread crust, pastry, toasted almond, and a hint of caramel. On the palate, the wine reveals a dry, rich, and intense cuvée, with superb flavor complexity. The drinkability is fresh and concentrated, with a saline note that enriches the finish. A wine of rare finesse, it embodies the class and sophistication typical of the finest Blanc de Blancs.

“L'Hors Serie” Blanc de Blancs de Avize by Chartogne Taillet is an extraordinary vintage champagne, produced in a limited edition. This wine stands out for its imposing structure and the minerality that defines its character, expressing a pure, artisanal style of sublime elegance. The grapes come primarily from the Lieu-Dit Chemin de Chalons located in the village of Avize. The wine is produced with native yeasts, with malolactic fermentation triggered naturally, and then matures on the lees in French oak barrels for at least 48 months. Finally, it ages on the lees for several months in the bottle. No filtration or fining is performed. The sugar content is approximately 1 g/L. Production is limited to a few thousand bottles.
