On one of the oldest plots of land in the entire St-Émilion appellation is Chäteau Pavie. In 1998, the Valettes ceded ownership of the estate to Gerard Perse, and, in 2012, Chäteau Pavie rightfully entered the firmament of the Saint-Émilion appellation, becoming Premier Grand Cru Classé. 137 hectares of land encapsulate the best of the terroir of Saint-Émilion, with a limestone plateau whose coast is formed by dense, deep clay, while the base is characterised by sandy, stony clay. The terroir is perfect for growing the red grape varieties typical of the area, merlot, cabernet sauvignon and cabernet franc. Between the rows, work is carried out following organic and sustainable farming principles, bringing each bunch to full ripeness and deliberately keeping yields low. An important working method that pays off, not to mention that the entire production process is under the direction of Michel Rolland, winemaker and absolute authority on the world wine scene. Château Pavie produces just under 50,000 bottles each year, with the lion's share going to the Saint-Emilion Grand Cru Classé.
