Once the must is obtained from the Nebbiolo grapes, it ferments on the skins at a controlled temperature for at least four weeks. The wine then ages for two years in stainless steel and then for 24 months in large 20-40 hl Slavonian oak barrels. It is then bottled unfiltered and aged for 12 months.
