THE WINE Rosso del Bepi is a Veneto made rom 55% Corvina, 30% Rondinella and 15% Cabernet sauvignon. The grapes are picked by hand and sorted before a 45-day fermentation. The juice macerates with the grape skins for 20 years. There is then a 7-year maturation in large, oak casks. This cuvée has a deep, ruby colour in the glass, and its nose gives off aromas of cherry, candied fruit, tobacco, and liquorice. The palate is supple and velvety with a beautiful tannic structure and persistent length. You can easily keep this wine for a few years in the cellar. Serve it at 16-18°C alongside a dish like grilled duck, veal, or mushroom risotto.
